Valli began working in New Orleans as a bar manager for a Bourbon Street strip club. He later opened his own bar in Cape Town, South Africa, which he ran for 3 years. He returned to New Orleans and worked at Emeril Lagasse's NOLA restaurant until Katrina forced him to move. He has tended bar at Highlands Bar and Grill, Cafe Dupont, 26 and Hot & Hot Fish Club. He was a finalist in a national bartending contest sponsored by GQ magazine and Bombay Sapphire gin in 2011.
Valli was the designer, bar manager and principal bartender at The Collins Bar on 2nd Avenue North for 2 years. He is now consulting with bars and restaurants in across the Southeast and building his next bar concept, The Atomic Lounge. It's located at 2113 1st Ave N, Birmingham AL 35203 and is slated to open in January of 2017.
